  • 1/2 cup canned pumpkin puree (100% pumpkin, not pie filling)
  • 2 ounces cream cheese, softened
  • 2 tablespoons brown sugar
  • 3 tablespoons granulated sugar, divided
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon, divided
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat. Let puff pastry soften for about 10 minutes if needed.
  2. In a medium mixing bowl, combine pumpkin puree, cream cheese, brown sugar, 1 tablespoon granulated sugar, vanilla extract, 1 teaspoon cinnamon, pumpkin pie spice, and a pinch of salt. Beat with a hand mixer or whisk until smooth and creamy.
  3. Unfold one sheet of puff pastry on a lightly floured surface. Roll out to about 10×12 inches if needed. Spread the pumpkin filling evenly over the entire surface.
  4. Place the second sheet of puff pastry on top, pressing gently to seal. Slice the stacked pastry into 1-inch wide strips (about 10-12 strips) using a sharp knife or pizza cutter.
  5. Twist each strip several times and lay onto the prepared baking sheet.
  6. In a small bowl, beat the egg with 1 tablespoon water. Brush each twist with the egg wash.
  7. Mix remaining 2 tablespoons granulated sugar with 1 teaspoon cinnamon. Sprinkle generously over the twists.
  8. Bake for 16-20 minutes, until puffed and golden brown. Rotate the pan halfway through baking.
  9. Let cool at least 5 minutes on the baking sheet before serving. Serve warm for best texture.
