Ingredients
- 2 lbs beef sirloin or chuck roast, cut into 1.5-inch cubes
- 1 teaspoon kosher salt (or to taste)
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil (for searing)
- 6 tablespoons unsalted butter, melted
- 8 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried Italian herbs (or dried thyme or oregano)
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
- Extra salt and pepper, to taste
Instructions
- Pat the beef cubes dry with paper towels and season with kosher salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the beef cubes for 1–2 minutes per side until browned but not cooked through. Transfer seared beef to the slow cooker.
- In a small bowl, combine melted butter, minced garlic, Worcestershire sauce, onion powder, smoked paprika, Italian herbs, and red pepper flakes (if using). Stir well.
- Pour the garlic butter sauce evenly over the beef cubes in the slow cooker and toss gently to coat.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the beef is fork-tender.
- Taste and adjust salt and pepper if needed. Sprinkle with chopped fresh parsley before serving.
Notes
For best flavor, always sear the beef before slow cooking. Use fresh garlic for maximum taste. If you want a thicker sauce, reduce it on the stovetop after cooking. This recipe is naturally low-carb and gluten-free (check your Worcestershire sauce). For dairy-free, use vegan butter. Leftovers keep well and taste even better the next day.
